ABSTRAK
Stroberi yang beredar di Malang dan Yogyakarta banyak dipasok dari Jawa Barat, terutama dari Malangbong (Garut). Buah stroberi sifatnya mudah rusak oleh pengaruh mekanis dan memiliki umur simpan yang sangat singkat. Beberapa varietas stroberi mempunyai umur simpan yang lebih panjang dari varietas lainnya, salah satunya Holibert. Oleh karena itulah stroberi dari Malangbong ini mulai melejit dengan areal tanam yang semakin luas dan pemasarannya menyebar ke berbagai kota di Indonesia. Penelitian ini untuk mengetahui perbandingan karakteristik mutu antara stroberi segar yang beredar di pasar tradisional dan pasar modern khususnya di wilayah Malang dan Yogyakarta dan bagaimana pengaruh setiap perlakuan penyimpanan terhadap umur simpan dan kualitas buah stroberi segar. Penelitian dilakukan pada tahun 2013 – 2014. Sampel buah yang digunakan adalah stroberi varietas Holibert dengan kondisi matang 80%. Metode yang digunakan adalah metode interview dan observasi. Dengan standar yang digunakan adalah FFV-35 dari UNECE dengan statistical process controldata variabel.Objek yang dikaji, yaitu karakteristik mutu fisik meliputi berat, diameter, tekstur dan warna, mutu kimiawi meliputi kadar air, total padatan terlarut, pH, dan kadar vitamin C, serta uji cemaran mikrobia menggunakan metode TPC (Total Plate Count). Dari penelitian ini didapatkan hasil sebagai berikut nilai rata-rata atribut mutu di pasar tradisional Malang 35,23% dan Yogyakarta 37,10 % dan termasuk stroberi kelas II, sedangkan stroberi yang masuk kelas ekstra di Malang 20,64% dan di Yogyakarta 24,80%. Untuk pasar modern (supermarket) nilainya lebih tinggi untuk yaitu Malang 72,44% dan Yogyakarta 73,07% termasuk stroberi kelas ekstra.

ABSTRACT
Strawberries marketed in Malang and Yogyakarta are mostly supplied from West Java, especially from Malangbong (Garut). Strawberries are easily damaged by mechanical influences and have very short shelf life. Some strawberry varieties, such as Holibert variety have a longer shelf life than other varieties. Therefore, strawberries from Malangbong are increasing and have extensive planting areas, as well as its marketing spread to various cities in Indonesia. This study objective was to compare the quality characteristics of fresh strawberries at traditional and modern markets, mainly in the area of Malang and Yogyakarta and to identify the effect of each treatment on the shelf life and fruit quality of fresh strawberries. The study was conducted in 2013 – 2014. The sample used was strawberry fruit of Holibert varietiy (ripeness condition was 80%). The method used is interview and observation using the standard of FFV-35 from the UNECE and the standard of Ministry of Research and Technology by statistical process control of data variable. Observation of physical quality characteristic included fruit weight, diameter, texture, color, and chemical quality comprised of water content, total solvent solids, pH, and vitamin C content, as well as microbial contamination testing using TPC (Total Plate Count). The results indicated that the average value of quality attributes at traditional market in Malang was 35,23% and that in Jogjakarta was 37,10% and was included as second class strawberries. While strawberries as extra class in Malang were 20.64% and in Yogyakarta were 24 80%. For modern market (supermarket), the value was higher for that in Malang (72.44%) and Yogyakarta (73.07%). They were included as strawberries of extra class.
